Our traditional cooks or our naturist specialized in vegetarian gourmet food with "wild"herbs (that you can recognize and hand pick with her ) will prepare delicious meals to savour under the shade of the centenary linden trees to the sound of the fountains, in the country “old school” pergola in front of the barbecue or in the candle lit 1890 elegant shabby greenhouse with a thousand reflections.

The places to chill and savour food as a re-generating cure are very diverse: 

from our historical drawing rooms, to the 1929 Olympic swimming pool, to a chill picnic under the ancient trees

HOW WE PRODUCE OUR FOOD

Our organic vegetables are all produced by us ( with all the secrets of observation of the lunar phases for sowing, pruning, propagation, transformation and conservation) in part traditionally with row cultivation and in part in a synergic garden, where the plants imitate Nature, by taking phosphorus , nitrogen and potassium, from their association and where the cultivated plants coexist harmoniously with wild flowers and edible plants.

In the kitchen we also use the wild forages of the season with delicious recipies with nettles, raponzoli, violet,elderberry, acacia flowers and much more….

Synergic agriculture is based on the close coexistence of species, on the practice of "not doing", avoiding hoeing, compacting the soil and fertilising.

It is based on the principle of mutuality: while the earth makes plants grow, the plants create fertile soil and through their organic residues give a product of different flavour and energy.

Lately we have devoted a lot of space to edible flowers for an innovative cuisine and aromatics to also produce oleolites and aromatic waters
